Chicken Haystacks

These chicken 'sundaes' are a great dinner for children because they have so many choices. Everyone gets to have it their own way! The toppings are all optional and of course you can add anything else that you might want.

1 can (12.5 oz) chicken
1 can (10.75 oz) cream of chicken soup
2 cups cooked rice

Toppings:

  • chow mein noodles
  • chopped celery
  • shredded coconut
  • raisins
  • canned crushed pineapple
  • slivered almonds or chopped peanuts
  • grated cheese
  • chopped green onions
  • chopped green, yellow or red peppers
  • sweet and sour sauce
  • soy sauce
  • peanut sauce
  1. Cook rice.
  2. Mix chicken and cream of chicken soup and warm on the stove, in a crockpot or in the microwave.
  3. Set chicken, rice, and toppings out on the table. Each person can spoon some chicken over the rice and then add any desired toppings.

Variation: The chicken soup can be served separately to spoon over the top of the haystack or can be omitted entirely.

tot tip: Don't serve nuts to children under age three. The vegetables can be steamed lightly for toddlers to avoid choking hazards.
